I finally got to try aji amarillo in my own kitchen, and the paste added such a bright, fruity kick to my rice bowl. The giant corn for crunch on top was a nice touch too.

The huacatay herb was a total discovery for me, and the dried giant corn added such a unique crunch to the meal. Everything came together easily for a genuinely exciting dinner.

The aji amarillo paste gave the whole dish that smoky, fruity kick I’ve been chasing since my last trip, and the huacatay added an herbal freshness I couldn’t quite place. Everything came pre-portioned, so I just tossed it together after work and felt like I’d been cooking all day.
