I threw these on the grill for a backyard cookout and the coarse grind gives them such a hearty, meaty bite. The natural casing snaps nicely when you bite in, and that slow-smoked flavor had everyone asking where I got them.

The gin marinade actually comes through — you get this subtle juniper note right before the smoke hits. I grilled them on a weeknight and the natural casing snapped nicely without any blowouts.

The gin really comes through in these, not overpowering but you can definitely taste it under the smoke. Coarse grind gives them a great texture that holds up on the grill without drying out.
